An easy recipe to create Thai olive fried rice. You can easily change this to add your favorite meat if you want to make it non-veg

Ingredients

  • 2 tbsp vegetable oil
  • 1 cup green curry paste
  • 2 cups rice, cooked
  • 1 cup olives, roughly chopped
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • ½ cup peanuts, roughly chopped
  • a handful of spring onions, chopped fine, to garnish on top

Method

  • To a pan, add the oil.
  • Once the oil is hot, add the green curry paste.
  • Cook the green curry paste till the water evaporates from it.
  • Next, add the cooked rice.
  • And mix it in with the green curry paste.
  • Then, add the olives.
  • And mix them in.
  • Next, add the soy sauce.
  • And mix it in.
  • Add the brown sugar.
  • Then, add the peanuts.
  • Finally add the spring onions.
  • And mix everything in.
  • Sprinkle with red chilies cut julienne and red chili flakes. Serve hot.
