The melting khoya [cream cheese], the delicious sugar syrup, and the perfectly creamy-yet-crunchy cheesecake come together as if they were meant to be! You can customize this to make it more healthy and suitable for diabetics.
Gulab Jamun Cheesecake
Fried Khoya dumplings baked into your favourite comfort dessert
Gulab Jamun
- Water for syrup 2 cups
- Sugar for syrup 1½ cups
- Baking powder ¼ teaspoon
- Maida - 6-7 tbsp
- Paneer 125 g
- Ghee for frying - 1 tbsp
- Sweetened condensed milk 100g
Cookie base
- Digestive cookie 150g
- Butter melted 60g
- Chopped Almonds 2 tbsp
- Rose Water 2 tsp
- Cardamom powder 1/2 tsp
Filling
- Gelatine 12g
- Water 30g
- Cream cheese 250g
- Castor sugar 110g
- Dairy cream 340g
- Lemon juice 1tbsp
- Gulab Jamun – enough to cover the entire 8” springform tin
- Rose Water 2 tsp
- Cardamom powder ½ tsp
- Pistas & rose petals for garnishing
For gulab jamun
- Knead condensed milk, paneer, maida, and baking powder with ghee to a smooth dough
- Make sugar syrup with the sugar and water
- Heat ghee in a Kadai
- Roll out the paneer mixture into round shapes and deep fry on medium heat till golden brown
- Soak in syrup
For the whole cheesecake
- Mix the ingredients for the cookie base and press them into a round tin of 8 inches in diameter
- Place the gulab jamun all around the pan in a circular manner and leave it in the fridge for 30 minutes
- Bloom the gelatine and water for 5 minutes and then place in the microwave for short bursts till you can get a clear solution
- Cream the cheese and sugar till smooth
- Add the cream, rose water, cardamom, lemon juice, and gelatine in a thin stream and blend
- Pour mixture into the cookie base and let it chill 4 hours or overnight
- For decoration, place cut Gulab Jamun on the top and garnish with pista and rose petals
