Poha
Flattened Rice cooked with Boiled Potatoes and Peas, and served with Peanuts and Sev
Ingredients
- 1 1/2 cup poha (flattened rice)
- water, to wash
- 1 tbsp oil
- 1/2 tsp mustard seeds
- a handful of curry leaves
- 1 dry red chili
- 1 small onion, chopped
- 1 large potato, boiled and cut into cubes
- 1 tsp ginger, minced
- 1 tsp coriander powder
- 1 tsp red chili powder
- 1/4 tsp turmeric powder
- 1/2 cup green peas
- salt, to taste
- 1 tsp chaat masala
- 1/2 tsp dry mango powder (amchur)
- a handful of coriander, chopped
- 1/2 cup peanuts, roasted and chopped
- 2 tbsp lemon juice
- 1/2 cup sev, to garnish
- Put the poha on a sieve, and wash it thoroughly under running water. Take off the excess water and set it aside.
- To a pan, add the oil. Once it is hot, add the mustard seeds. Once they start popping, add the curry leaves and red chili. Sauté for a minute.
- Then, add the onions, and cook them till they turn translucent. This should take about 3-4 mins.
- Then, add the potatoes, ginger, coriander powder, red chili powder, turmeric powder and the poha. Mix everything together.
- Add the peas, salt, chaat masala and dry mango powder, and mix everything in, and take it off the heat.
- To serve, transfer the poha to a serving bowl, and sprinkle with coriander, peanuts, lemon juice and sev.
- Serve hot.
