Ingredients

  • 250 gms firm tofu, cut into big pieces
  • 4 tbsp red curry paste (Recipe: http://www.desidaawat.com/red-curry-paste/)
  • 1 tbsp lemongrass, minced
  • 1 tbsp ginger, chopped fine
  • ½ tsp turmeric powder
  • 1 tbsp light soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp vinegar
  • 4 tbsp vegetable oil
  • ¼ spring onions, chopped fine

Method

  • To a bowl, add the tofu.
  • To the tofu, add the red curry paste.
  • Then, add the ginger.
  • Next, add the lemongrass.
  • Add the brown sugar.
  • Then, add the yellow chili powder.
  • Add the soy sauce.
  • Then, add the vinegar.
  • And give it a good mix.
  • To a pan, add the oil.
  • Heat the oil and add the tofu pieces to it.
  • Cook them on both sides till they turn brown.
  • Layer them on your serving plate.
  • Sprinkle with chopped peanuts, coriander, spring onions and chilies on top. Serve hot.
