Chindian street food speciality and my favourite too. The wholesome & nutritious poha has been spiced up with Chinese flavours with the addition of schezwan chutney. I have added some mixed vegetables to up the nutritional value of the poha.
Schezwan Poha
Chindian street food - wholesome & nutritious
- 2 cups poha/flattened rice
For making sauce
- 1 tsp oil
- 1 tsp chopped garlic
- 2 tbsp chopped onion
- 1 dry red chilli
- ½ cup small cut blanched mixed vegetable (beans, carrots, green peas and corn)
- 3 tbsp spring onions chopped
- salt to taste
- ½ tsp soya sauce
- 1 tsp tomato sauce
- 1 tbsp schezwan chutney
- ¼ tsp sugar
- spring onions for garnishing
- Wash and rinse the poha couple of times and toss it gently. keep it aside
- Heat oil in a pan, add dried red chilli and then add chopped onion and garlic until it turns aromatic
- Add chopped mixed vegetables and fry for a minute
- Add salt, tomato sauce, soya sauce, schezwan chutney and fry for few seconds
- Sprinkle sugar, mix once. add soaked poha
- Mix gently and serve hot
