A quesadilla is one of the most popular dishes in any Mexican cuisine and has its origins from colonial Mexico.
A quesadilla is normally a flour or corn tortilla, which is filled with refried beans, vegetables and cheese. It is then lightly grilled on a pan, and served with a cheese dip or guacamole.
The quesadillas can be served in either of the 2 ways:
put your chipotle paste on one tortilla, fill half a side with refried beans, vegetables and cheese, and fold it into half, so as to resemble a half moon.
the other way to make a quesadilla is to spread two tortilla with chipotle paste, add the refried beans, vegetables and cheese on one, and stack the second tortilla on top of the first.
Either way you make the quesadillas, the ultimate taste is going to be amazing.

Vegetable Quesadillas
Vegetarian Quesadilla with beans, veggies and moderate amount of cheese tucked inside a whole wheat tortilla and then baked. Or turn into a freezer meal for busy weeknights.
- 2 tortillas
- 2 tsp chipotle paste
- ¼ cup refried beans boiled in salt water
- 1 tsp jalapeños chopped
- ¼ cup cheese
- ¼ red, green and yellow peppers chopped fine
- Place a tortilla on a plate.
- Spread out the chipotle paste to cover most of the tortilla.
- Add the red kidney beans.
- Next, add a few of the peppers.
- Finally, add the cheese.
- Fold the tortilla in half.
- And cook on a pan on medium heat on both sides.
- Serve with red kidney beans and chipotle cheese sauce.
- Serve hot.
