Massaman Chicken Curry
Massaman curry is a fusion of Thai- and Indian-style curries, utilizing both a red-style curry paste (Thai influence) and dry whole spices like cumin, coriander, cinnamon, and nutmeg (Indian influence). We are adding chicken to this to make a tasty Chicken curry
- 700gm – chicken
- 4- tbsp. oil
- 1c coconut cream
- 6-8 tbsp
- massaman curry paste
- 3 tbsp-fish sauce
- 1-2 tsp – sugar
- 5-tbsp- tamarind
- 6- black cardamom
- 2 inch cinnamon
- potatoes (2)
- onions
- eggplant
- Salt -to taste
- Turmeric – optional
- Peanuts roasted - 50 gms
- Heat the oil and fry the paste till fragrant.
- Add the chicken and the potatoes and fry for 2-3 minutes
- Add the coconut cream and mix well and simmer till chicken is cooked
- Add the roasted peanut on top
