Ingredients

  • 1 medium round eggplant
  • 2-3 tbsp tahini
  • 1 clove garlic
  • 1-2 tbsp lemon juice
  • salt to taste
  • few pomegranate seeds and some parsley for garnish

Method

  • Roast the eggplant directly on gas flame until charred from outside and soft from centre. You can prick a knife in the centre of the eggplant to check
  • Allow the eggplant to cool and then cut it though the centre and scoop out all the flesh
  • Transfer the flesh into a blender. Add tahini, garlic, lemon juice and salt. Blend to a rough or smooth texture as per preference
  • Check seasoning and transfer to a serving bowl. Garnish with pomegranate seeds and fresh chopped parsley
