Olive and Herb Focaccia
Italian bread flavoured with herbs and olives
To Make The Yeast Mixture
- 100 gms water, warm
- 10 gms sugar
- 2 tsp yeast
To Make The Dough
- 180 gms all purpose flour
- 40 ml olive oil (to be used in batches)
- 5 gms salt
To Make The Bread
- a handful of olives, chopped in circles
- ¼ cup mixed dried herbs
To Make The Yeast Mixture
- To a bowl with water, add the sugar and yeast. Give it a good mix, and let it rest for at least half an hour.
To Make The Dough
- To another bowl, add the flour, yeast mixture, 10ml of the olive oil and salt.
- Knead it into a dough. This should take about 15-20 minutes.
To Make The Bread
- Add 10ml oil to a glass bowl, put the dough in and let it rest in a warm place for at least an hour. Once its risen, poke holes into the dough with your fingertips.
- Add the olives and herbs on top. Then, add the remaining olive oil.
- Bake in a pre heated oven at 180 degrees for 12 – 15 minutes or till done. Serve fresh.

Factoid
Focaccia has a history dating back almost 2,000 years. Some accounts credit the Etruscans while others give a nod to the Greeks for focaccia's creation. These days Liguria (the region that’s home to Genoa) is considered the epicenter for traditional Italian focaccia.
