To Make The Yeast Mixture

  • 100 gms water, warm
  • 10 gms sugar
  • 2 tsp yeast

To Make The Dough

  • 180 gms all purpose flour
  • 40 ml olive oil (to be used in batches)
  • 5 gms salt

To Make The Bread

  • a handful of olives, chopped in circles
  • ¼ cup mixed dried herbs

To Make The Yeast Mixture

  • To a bowl with water, add the sugar and yeast. Give it a good mix, and let it rest for at least half an hour.

To Make The Dough

  • To another bowl, add the flour, yeast mixture, 10ml of the olive oil and salt.
  • Knead it into a dough. This should take about 15-20 minutes.

To Make The Bread

  • Add 10ml oil to a glass bowl, put the dough in and let it rest in a warm place for at least an hour. Once its risen, poke holes into the dough with your fingertips.
  • Add the olives and herbs on top. Then, add the remaining olive oil.
  • Bake in a pre heated oven at 180 degrees for 12 – 15 minutes or till done. Serve fresh.

Factoid

Focaccia has a history dating back almost 2,000 years. Some accounts credit the Etruscans while others give a nod to the Greeks for focaccia's creation. These days Liguria (the region that’s home to Genoa) is considered the epicenter for traditional Italian focaccia.
