Try this simple recipe to make refried beans to act as a dip or as a filler for burritos and quesadillas
- 2 tbsp oil
- ½ onion, chopped fine
- 1 tsp ginger
- 1 tsp garlic
- 1 tomato, chopped fine
- 1 tsp red chili powder
- salt, to taste
- 1 cup kidney beans
- ½ cup leftover kidney beans water
- To a pan, add the oil.
- Heat the oil, and add the onions.
- Saute the onions for a couple of minutes, and then add the ginger.
- Next, add the garlic. Sauté and brown the onions for a few minutes, and then add the tomatoes.
- Cook the tomatoes, till the water has evaporated from them, Then, add the red chili powder. Next, add the salt, And mix everything together.
- Add the kidney beans, Finally, add the leftover water, Cook for a few minutes, and with a masher, mash the kidney beans roughly.
- Once they have been mashed, take them off the heat, Top with grated cheddar cheese, sour cream, coriander and red chilies on top. Serve fresh.
