  • 2 tbsp oil
  • ½ onion, chopped fine
  • 1 tsp ginger
  • 1 tsp garlic
  • 1 tomato, chopped fine
  • 1 tsp red chili powder
  • salt, to taste
  • 1 cup kidney beans
  • ½ cup leftover kidney beans water

  • To a pan, add the oil.
  • Heat the oil, and add the onions.
  • Saute the onions for a couple of minutes, and then add the ginger.
  • Next, add the garlic. Sauté and brown the onions for a few minutes, and then add the tomatoes.
  • Cook the tomatoes, till the water has evaporated from them, Then, add the red chili powder. Next, add the salt, And mix everything together.
  • Add the kidney beans, Finally, add the leftover water, Cook for a few minutes, and with a masher, mash the kidney beans roughly.
  • Once they have been mashed, take them off the heat, Top with grated cheddar cheese, sour cream, coriander and red chilies on top. Serve fresh.
