Indian Fusion Cooking with Saffron

While the Saffron or kesar has been used in Indian desserts from time immemorial, its use in western desserts has been quite limited (though it has been rising in popularity in recent years).

So we thought we’d bring a bit of the East (specifically, saffron!) to our Western desserts and explore the unique fragrance and flavour of saffron.

Rasmalai Cake

The Rasmalai is a beloved Indian mithai – soft, spongy, and soaked in luscious saffron cream. We’ve tried to bring the flavours of the rasmalai to a western dessert one can never say no to – cake!

Our Rasmalai Cake is a layered cake that emulates the flavours of the rasmalai. The addition of saffron enhances the flavours of the rasmalai in the cake and gives the cake its vibrant yellow colour.

It’s a treat every dessert-lover would enjoy, especially if you’re a fan of rasmalai and cake (like we are). Or, if you’re not a big fan of cake and prefer desserts suited to the Indian palate, this fusion of East and West is just the thing to test the waters and explore foods outside your comfort zone.
